Brunchin’ All Day

Brunch – it’s a meal you have on days you’ve slept in, woke up at noon but really want breakfast and not yet ready for lunch. So, let’s go for brunch!

It’s my 2nd favorite meal of the day, first one is ice cream!! (Just kidding, first is Breakfast. LOVE breakfast!!) My cousin was in town from BC so I took her to a few fun places in Toronto. BC has the views, but Toronto has some pretty awesome places as well!!

We went to Figo for brunch one day.  It’s such a pretty restaurant!! I can sit here all day and sip on lattes!!

We really wanted the pancakes, but because of traffic we were late (yes, it was traffic, it wasn’t us! I swear!). Figo ran out of pancake batter, however, we ordered the scrambled eggs and the frittata. If you really want pancakes, I recommend booking one of the earlier brunch times.

The food was a little salty, but very good. Of course, we had our regular cappuccino and latte with the meal!! Put us two together, and we can survive off of caffeine. My cousin has a pretty awesome blog @thenewcollective_!! Check it out for fashion, beauty, and travel!!

Figo’s outdoor patio is really chic as well, but it was way too hot to sit outside. Let me know your thoughts if you ever have the chance to brunch at Figo!!

Brunch Lunch Dinner In New York

Everyone is always excited to visit New York, the Big Apple, the City of Dreams, the City of Fashion and the City of Lights. I’ve been to NYC a few times, and every trip has been as if I’m visiting for the very first time. There are so many things about New York that I love!! This time I had the opportunity to explore quite a few restaurants. Here are my favorite 5 that are a MUST visit (for the food, atmosphere, and of course Instagram posts).

1. ROSEMARY’S – We ate breakfast here, and then lunch the next day!! We pretty much wanted to come to this restaurant for every meal!! This restaurant is perfect for bridal showers, baby showers, a family brunch, a date night, and everything else. This place is filled with friendly staff, delicious food, chic decor and positive vibes.

2. Gallow Green – This restaurant is in the McKittrick Hotel located in Chelsea and has the most adorable rooftop patio with string lights, delectable food, and a unique atmosphere.  Once you arrive at this restaurant, it’s quite an interesting experience from the entrance to the rooftop.  This is a MUST visit because of the mysterious entrance, cool vibes and delicious food!!

3. CLAUDETTE – This is a sister restaurant of Rosemary’s located in Greenwich Village. We went for brunch because the items on the menu sounded delicious!! However, brunch is only served on weekends. Nonetheless, this was a quaint little restaurant and we decided to have lunch instead. The service was exceptional, along with the food.

4. THE STANDARD ROOFTOP – The views from this rooftop are breathtaking. We went to this rooftop at sunset for some drinks and relaxation. It has pretty pink and white couches with green tarp. It gets quite busy, but people are in and out because it only offers drinks and crepes. So, of course we had both.

5. NARCISSA – We ate brunch at this hidden gem in NYC’s concrete jungle. It’s a beautiful patio offering a relaxing atmosphere with delectable brunch. In my cousin’s words “I HAD THE BEST AVOCADO TOAST HERE”. You can read more about this restaurant on her blog at @thenewcollective_

Date Bars!

I always need a little something sweet after every meal. I try to look for healthy/natural sweets. This time I decided to make my own dessert, a date bar. I researched a few “easy” date bar recipes, but I didn’t have all of the required ingredients at home. So, I decided to give it a little twist, and make my own recipe. It’s really easy! Give it a try, and let me know how you like it!

Ingredients:

1 1/2 cups dates, pitted and chopped

1 1/2 cups water

2 1/2 cups oats (I used Quaker Quick Oats)

1 tsp cinnamon

  1. Boil 1 1/2 cups of water in a medium pan. Add 1 1/2 cups of pitted & chopped dates to boiling water. Lower heat, and simmer covered. Approximately 10 minutes or once liquid is thick.
  2. After 10 minutes, remove from heat and stir while breaking/squishing dates.
  3. Mix 2 1/2 cups of oats, and cinnamon in a separate bowl.
  4. Add the dates mixture to the oats mixtures.
  5. Mix well!
  6. Spray 8 x 8 baking tray with oil, and pour the mixture into the tray. The mixture should be thick.
  7. Spread out the mixture evenly, and drizzle with honey.
  8. Bake at 350 degrees for 10 minutes.
  9. Let cool, and serve warm or cold. (Sprinkle a little icing sugar!)

Eggplant Lasagna

I’m always looking for ways to make meals healthy.  This time I tried an eggplant lasagna.

Ingredients:

450 grams ground chicken/turkey

1/2 green bell pepper

1/2 yellow bell pepper

1/2 red bell pepper

1/2 zucchini

1/2 onion

3-4 medium mushrooms

2 cans of 650 ml pasta sauce
